White Bean Dip Ingredients: ¼ bulb of Garlic ¼ teaspoon Oregano ¾ cup White beans (boiled/steamed) ¼ tablespoon Olive Oil ¼ teaspoon chopped Cilantro/Coriander ¼ teaspoon Lemon Rind
½ teaspoon Lemon juice
Salt and Black Pepper to taste
Method:
Place the garlic bulb on a baking sheet, sprinkle salt, black pepper and olive oil on the top and and bake for 5-10 minutes
Put the white beans, oregano, lemon juice, lemon rind and roasted garlic in a food processor and blend into a paste like mixture.
Garnish with chopped Cilantro and serve
Variation – Add a bit of green chilies and ginger paste to make it a bit spicy.
Green Pepper and Cottage Cheese Vegetable
Ingredients:
1 pound Cottage Cheese, cubed
1 Green Pepper, chopped finely
½ pound Yogurt
1 tablespoon Garam masala powder
2 tablespoons Cilantro, chopped finely
4-6 Mint leaves, chopped finely
1 pod Garlic, chopped finely
1 lemon, sliced in rounds
Salt to taste
Method:
Crush the green peppers, curd, salt, garam masala powder, cilantro, mint, and garlic in a coarse paste.
Marinate the cottage cheese cubes for about 2-3 hours in the above paste.
Heat the oven at 380 degrees Fahrenheit and grill until the cubes are soft. Serve in a plate with the lemon slices as a garnish.
