2 cups Self-raising Flour
½ cup Butter
¾ cup light Brown sugar
8 oz pitted Dates, chopped finely
Juice of 1 lemon
Rind of 1 lemon
Grease a 7” round baking tin.
In a bowl, add the flour and oats.
Coarsely grate the butter and rub into the dry ingredients. Stir in the sugar.
Press half the mixture into the prepared tin.
Place the chopped dates, lemon rind and juice in a small pan with a little water. Simmer on a low flame until the dates are soft. Drain completely.
Spread over the mixture in the baking tin.
Put the remaining dry flour mixture over the date mixture.
Bake for 30 minutes at 350 degrees Fahrenheit until lightly golden-brown.
Cut into 12 pieces while still warm and then let it cool in the tin.
